In a historic pastry shop in the centre, under the guidance of a Nicosia pastry-maker, learn three traditional sweet recipes:

  • Cannolo — the Nicosia version, with local ricotta.
  • Pizziddati — a sweet-savoury biscuit of old tradition, filled with dried-fruit preserves.
  • Nocattoli — almond-and-Nebrodi-honey biscuit.

You work the dough, fry the cannolo shells, fill them. Four hours of hands-in-flour, with final tasting.
